Tous au complet, Maryia, nous a installés autour de la table en marbre pour nous expliquer l’origine du chocolat, les différentes sortes de cacaoyer, le traitement des fèves de cacao et nous faire déguster des pistoles de différentes origines, du grué et du chocolat blanc. Ensuite, Christophe est venu nous faire une démonstration de tablage : il a renversé une belle quantité de chocolat chaud à 55 °C sur la table en marbre pour le refroidir à 29 °C. Maryia nous a expliqué que Christophe allait le réchauffer à nouveau à 32 °C et que cette opération allait créer les cristaux β qui apporteront le brillant au chocolat.
