Hier soir, je recherchais une recette dans un ancien numéro de Elle à table, lorsque je suis tombée sur le portrait d’un boulanger parisien. Mais comment et pourquoi cet article ne m’avait-il pas sauté aux yeux ! Mystère. Dans cet article, Frédéric Pichard explique comment il élabore une vraie baguette selon la tradition française. Il parle d’un phénomène que je connaissais pour le vin, mais que j’ignorais pour pain : la fermentation avec les levures indigènes c’est-à-dire les levures naturellement présentes.
